Ahi Poke by Chef Ikaika Manaku

The grandson of an aku (skipjack) fisherman, Kaua‘i-born Ikaika Manaku was kind enough to share this family recipe for poke, America’s most trending dish of 2018.

Poke Recipe by Ikaika Manaku, The Westin Nanea Ocean Villas

Prep time: 30 minutes
Servings: 5–6

  • 2 lb. ‘ahi tuna, medium dice
  • 2 oz. ogo seaweed, chopped
  • 1 oz. tobiko (flying fish roe)
  • ¼ oz. ginger, minced
  • 2 oz. green onion, chopped
  • 1 oz. sesame seeds, toasted
  • ½ oz. sambal chili paste
  • 1 oz. toasted sesame oil
  • Hawaiian salt to taste

Method: Combine ingredients in large, cold mixing bowl. Mix lightly, being sure not to over mix. Add salt to taste. Chill well before serving.
