Claim a sherbet-colored couch at sunset to feast on glistening sashimi and sushi sprinkled with baby shiso leaves from Michael McCoy’s farm in Kula. With names like “Heaven’s Door” and “Wandering Poet,” the saké selections encourage a glamorous relaxation. At the Four Seasons, everything is by the book: the sushi chefs are Tokyo-trained, the rice is shipped straight from Japan, and the ocean view is pure Maui.
