Chef Ralph Giles, owner of Vineyard Food Company, is on a mission to bring East Coast-style sandwiches to Maui. The new deli’s signature sandwich, the Vineyard Street, is stacked high with tender roast beef—as a good Boston sandwich should be. Listed as “thinly sliced” on the menu, the cuts are served thick as a man’s thumb and dripping with mango BBQ sauce. Fresh slices of Kula onions cut through the sweetness and punctuate each bite.
