- 1 16-ounce can cut green beans
- 1/2 pound bacon (cut into small pieces)
- 2 cups diced onions
- 2 cloves garlic
- 2 cups diced stewed tomatoes with liquid
- 2 cups crushed canned tomatoes
- 1 teaspoon salt
- 1 teaspoon of your favorite dry rub
- 1 cup of your favorite BBQ sauce
GRILLED TRI-TIP
- 3-to 5-pound tri-tip beef roast
RUB
- kosher salt
- black pepper
- paprika
- crushed red pepper
- granulated garlic
- any other herb or spice that you enjoy
UNCLE KUNKEL’S GREEN BEANS: Cook bacon until golden brown. Add onions and garlic and cook until soft. Mix in the stewed and canned tomatoes, the dry rub, salt, and BBQ sauce. Bring to a light boil to thicken sauce a little. Strain the green beans and pour into Pyrex dish. Top the green beans with the tomato mixture. Heat in the oven for 45 minutes at 350 degrees.
GRILLED TRI-TIP: Start with a clean grill sprayed with Pam. You will need a hot, hot cooking surface-500 degrees or higher. Once the grill is very hot, sear the meat on the sides, top and bottom to create a crust and light char all over. Cook about 4 minutes for each section of the meat. Remove from heat. (Tri-tip will be rare in the middle.) Wrap the charred meat in foil and let rest for 15 minutes, which finishes the interior cooking. Slice the tri-tip against the grain into 1/4-inch-thick pieces and serve.
