Taro Burger
Imagine a vegan burger recipe so good that other noteworthy restaurants on Maui purchase it wholesale and position it front and center on their own menus. This is the Taro Burger from multiple ‘Aipono Award-winning vegetarian restaurant Moku Roots. Owners Alexa Caskey and Erica Gale created this plant-based burger using locally grown taro root, garlic and fresh herbs. They sear it to give it a golden crust and top it with their famous macadamia-nut aioli spread, for a note of umami and an additional dose of protein. Topped with fresh, locally grown lettuce, tomatoes and onions and served on a wheat-and-oat bun, this sandwich is so good, you’ll never miss the meat!
