Few destinations rival the luxury of Mama’s Fish House. Situated on a private cove, shaded by palms, this North Shore institution is famous for listing the fishermen who reel in the daily specials. But Chef Perry Bateman works wonders with steak, too. His seared-beef Polynesian appetizer is generous enough to share—though you might not want to. Served in a grilled ripe papaya, juicy chunks of steak are tossed with tomato, Maui onion, olive oil, and a dash of lime. Uncomplicated perfection.
