kai sushiKai Sushi Bar at the Ritz-Carlton Kapalua. Pull up a seat at the Ritz’s newly renovated sushi bar for a feast that engages all five senses. Tadashi Yoshino’s menu is spare, but portions are generous. The ample salmon skin roll is stuffed with shiso and crunchy pickled carrot. Butter-soft toro (tuna belly) and pale hamachi (yellowtail) are of such high caliber it’s an insult to douse them in shoyu. Fresh Monterey uni (sea urchin) and silvery saba (mackerel) will delight sushi purists. Organic-shaped platters serve as lovely frames for nigiri, and milky, unfiltered sake whispers from blown glass decanters. Above the bar, carved ceiling beams mimic the planks of a Hawaiian voyaging canoe. Dining-room tables overlook the pool, and beyond that, the sparkling Pacific. 1 Ritz-Carlton Dr., Kapalua, 669-6200.
