with Meyer Lemon Maple Dressing

Dressing Ingredients:
- 2-4 Meyer lemons, enough to render 1/4 cup lemon zest and 1 cup lemon juice
- 1/4 cup pure maple syrup
- 1/4 cup red onions, finely minced
- 3 cloves garlic, finely minced
- handful of fresh herbs (basil, parsley, mint, chives . . . your choice), chopped
- 1 teaspoon salt
- 3/4 cup extra virgin olive oil
Salad Ingredients:
- 1/2 cup slivered onions
- 1 large bunch curly kale, stems removed
- large handful of arugula or other salad greens
- 1/2 cup almonds, roughly chopped
- 1 cucumber, seeded and cut into half-moons
- 1 avocado, diced
- 1 beet, peeled and cut into cubes
Dressing Directions: On a cutting board, sprinkle herbs, minced onions and garlic until macerated to a pulp. Whisk all ingredients together, except the olive oil. Whisk in olive oil.
Salad Directions: Break kale into bite-sized pieces, removing hard stems or veins. Fold 1/4 cup dressing into the kale, tossing to coat, adding more dressing if desired. Add arugula, almonds and cucumbers, tossing to coat. (Add more dressing and salt, to taste.) In a separate bowl, toss beets with a little dressing. Garnish salad with beets and avocado. Enjoy!
