Yield: 1 cocktail
- 2 oz. Tanqueray Gin, optional
- 1 1/2 oz. fresh, homemade lemon sour,* or high-quality store-bought
- 3 cucumber wheels
- 2 small thyme sprigs
- pinch of sea salt
- 1/2 c. club soda
- 1 lemon peel twist

Method: Muddle one cucumber slice with thyme and sour. Add salt and gin, fill shaker with ice, shake and strain over ice into highball glass. Top with club soda. Garnish with thyme sprig, 2 thin cucumber slices and twist of lemon peel.
